The Green Olive officially has an estimated opening date. According to Ed Fimbres, the dining services manager, the Green Olive should be opening in about another week, with a target launch date of Sept. 24.

At this time, they are waiting for “state-side fire inspection,” Fimbres said. Until they are approved, the official opening date will be unknown.
